Shrimp Grilled Cheese with Spirit



If you like a little spice in your mouth this is the grilled cheese for you. Take some of the best Gulf shrimp and spice them up with Redneck Chef Seasoning add 3 great cheeses along with a nice cooling but spicy jalapeno ranch dressing and your taste bud will sing.

1 pound large Gulf Shrimp, cleaned and deveined
2 tablespoons chopped pickled Jalapeno peppers, with 1 tablespoon of the pickle brine
1/3 cup Ranch Salad dressing
4 ounces Monterey Jack with Habaneros Cheese, sliced 1/8 inch thick
4 ounces Sharp Cheddar Cheese, slices
4 ounces Fontina Cheese, grated
3 tablespoons Redneck Chef Seasoning
8 tablespoons Butter
8 Slices of Sourdough Bread, slice ½ inch thick
2 tablespoons canola oil

Season the shrimp with the Redneck Chef Seasoning. In a skillet over Medium High heat add the oil then the shrimp and cook about 1 minute on each side until done, remove and set aside.

To Build the Sandwich – On the bottom slice of bread place 1 slice of Cheddar Cheese and one slice of Pepper Jack Cheese. Next add a layer of the shrimp top with one ounce of the shredded Fontina Cheese and about 1 ounce of the Jalapeno Ranch Sauce, top with remaining slice of Sourdough. Heat a grill pan to medium heat add one tablespoon of butter and when melted add the sandwich, flip and add another tablespoon of butter and grill until both sides are brown and the cheese is well melted. Do the same for the remaining sandwiches. Makes 4 sandwiches.

Recipe Tips: Cook the sandwich slowly on medium-low heat, so the inside gets melted and hot before the outside gets too dark. Please handle the sandwich carefully when adding to the pan and during flipping as you will want to keep everything from falling out.
